- 1 1/2 tsp. cumin seeds
- 8 cardamom pods
- 2.5 cms cinnamon stick
- 8 cloves
- 1 star anise
- 100 mL groundnut oil
- 2 large onions (peeled and thinly sliced)
- 1 tsp. ground nutmeg
- 1 tsp. black pepper
- 1 Tbsp. chilli powder
- 1 Tbsp. ground coriander
- 1 tsp. Garam Masala
- 1 tsp. ground turmeric
- 4 Tbsp. tomato purée (an ingredient of much debate)
- 1 bunch coriander leaves (fresh, finely chopped)
- 3 cms fresh ginger (piece, peeled and julienned)
