    I'm a huge fan of roasted veggies and this is no exception. I'm not certain I like the tanginess of the lemon juice in this recipe, though. Also, after 20 minutes and not much browning, I upped the oven to 425 and crisped them for another 10 minutes, stirring after 5 to get them browned all over.
