Awesome! Great way to use my garden veggies! I did not have broccoli or cauliflower but used Japanese eggplant, zucchini, red onion, sweet potato and carrots. I roasted the canned (drained & rinsed) chic peas along with the veggies and they still got crispy. Husband doesn’t like lentils, so we paired it with Zaterains Cilantro lime rice.. yummmmm.
