- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 3 Tbsp. balsamic vinegar
- 1/2 tsp. salt
- 1 tsp. garlic powder

Directions
- Preheat the oven to 425F. Line a sheet pan with parchment paper.
- Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking. Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
- Bake for 35 minutes.
