- 1 serrano pepper (medium, or jalapeño, seeds + stems removed, omit if not into spicy food)
- 1 cup cilantro (packed, thick bottom stems cut off)
- 1 cup flat-leaf parsley (packed)
- 3 Tbsp. avocado (ripe)
- 1/4 tsp. salt (plus more to taste)
- 3 Tbsp. lime juice
- 1 Tbsp. maple syrup (or other sweetener of choice)
- 3 Tbsp. water (to thin, or 45 ml, as original recipe is written)
- 4 cups greens (hearty, spinach, kale, or mustard greens, chopped)
- 1 avocado (ripe, chopped)
- 3 Tbsp. hemp seeds
- fresh herbs (optional:, cilantro, parsley, thyme, etc.)

Doubled the recipe makes a lot! Super yummy and crowd pleaser - perfect for a potluck and can be made ahead. Love the chimichurri for grilled meat as well.
