This was so yummy! I didn’t add the sun dried tomatoes and I don’t think it needed them at all. I also chose to stir through the butter at the end with the cheese. The tomato flavour was so rich and it became creamy at the end with the cheese and butter. I think I used a little more tomatoes than the recipe stated. Next time I think I will add a grated zucchini with the onion just to up the veg intake, I don’t think you would notice it in there. Carnivore hubby loved it even without meat. Just served with a simple cos lettuce and Parmesan salad.
