- 4 lb. fresh tomatoes (garden-, that have skins and seeds removed from par-boiling ahead and run through a tomato 'mill'.)
- 6 large garlic cloves (peeled and minced)
- 4 Tbsp. extra-virgin olive oil
- 2 Tbsp. butter
- 1 tsp. sea salt (freshly-cracked)
- 1 tsp. cracked black pepper (freshly-)
- 1 onion (medium, diced)
- 6 Tbsp. fresh basil (garden-, freshly diced)
- 1 tsp. oregano (freshly, minced or dried)
- 2 tsp. sugar
- 3 cups chicken stock (if necessary for your taste preferences, but which we don't use because we like a "pure-tomatoes-only" soup that is not watered down.)
- 1/2 cup heavy cream
- basil (more freshly diced)
- garlic salt (some, if desired)
- 1 chunk Parmesan (or Manchebo cheese, about 8 oz., cut up into 1" cubes)
- olive oil cooking spray (for the baking pan)
