- 1 onion (medium sized, finely chopped)
- 2 Tbsp. fresh parsley (plus some extra for sprinkling at end–my addition)
- 1 tsp. paprika (Bittman does not say, the book is from 1994 so I decided to use smoked, which I prefer)
- 1 Tbsp. olive oil
- salt
