- 8 lb. plum tomatoes (approx. 32-40 roma/)
- 2 lb. peppers (approx. 12 Anaheims plus 4 jalapenos is a good combo of flavor & heat, weigh and adjust quantity to equal 2 lbs.)
- 4 onions (medium)
- 8 garlic cloves
- 1 cup cilantro leaves (fresh)
- 1 Tbsp. Mexican oregano (dried, or regular oregano)
- 2 Tbsp. ground cumin
- 2 Tbsp. kosher salt
- 2 Tbsp. ground black pepper
- 1 cup bottled lime juice (for canning safety, don't use fresh)
- 1 cup cider vinegar (or substitute additional bottled lime/lemon juice for vinegar)
- 1 cup water
- crushed red pepper flakes (optional, add to taste for a hotter salsa)

Tasty. Been sticking with it pretty much exactly. Have now canned over 30 jars of it. Every few jars we’ll add our homemade hot sauce just to change it up. We use all tomatoes from our garden and the jalapeños as well. Try it!
