- 1/4 cup raw cashews (soak your cashews overnight if you don’t have a Vitamix)
- 80 grams diced red onion
- 4 large garlic cloves (with skins on)
- 2 roast (serrano peppers, 2 but only add 1 to the blender to taste before adding the 2nd since peppers vary so much. I used 2.)
- 14.5 oz. fire roasted tomatoes
- 1 Tbsp. fresh lime juice
- 1/4 tsp. ground cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. fine salt
