It needed help. I added hot sauce, and the juice of 1 lime. It wasn’t great, but those additions made it at least edible.

That roasted red pepper sauce is awesome, plus I am a big fan of adding nutritional yeast to my dishes. You could definitely freestyle it with the veggies and use whatever you have on hand. Great recipe!

So good. I have an allergy to all legumes, so I substituted roasted cauliflower and chicken thighs for the chickpeas. I also added a heaping teaspoon of curry powder and used canned, diced tomatoes for the cherry tomatoes. Finally, I used buttermilk instead of coconut milk. It was delicious.

making it for the 3rd time. Not exactly like a curry but it has an awesome combination of red bell pepper and coconut milk

Not sure if it would qualify as curry but it turned out great! Good healthy meal. It did take longer than an hour to make though.

This was not a curry. I think the title is a bit misleading. It didn't come out good at all and I followed the recipe exactly with no modifications made. I will not be making this again.

This took much longer than an hour to make and did not seem like a curry, it was a far more mushy substance
