- 6 red bell peppers (roasted, cored, seeded, deribbed and chopped, 3 cups chopped, roasted, peeled red bell peppers, 1½ pounds roasted)
- 5 oz. grape tomatoes (super-sweet)
- 1/4 red onion (peeled, and rough chopped)
- 2 serrano chili peppers (halved lengthwise, cored, seeded, and deribbed, use disposable gloves!)
- 2 cloves garlic (peeled)
- 3/4 cup chicken stock
- 1/4 fresh orange juice
- 1/4 cup olive oil
- 2 Tbsp. grated orange zest (finely)
- 2 Tbsp. sherry vinegar (excellent quality)
- 2 Tbsp. fresh lemon juice
- 2 tsp. paprika (smoked hot)
- 1 tsp. salt
- 1/4 tsp. ground white pepper (freshly)
- 1 cup yellow tomato (seeded, juiced, diced, 1 tomato)
- 1/2 cup green onions (finely slivered, green part only, 2 green onions)
- 2 Tbsp. chopped cilantro (or parsley if preferred)
- 2 tsp. grated lemon peel (coarsely)
