- 2 Tbsp. half-and-half cream (optional)
- 3 lb. pie pumpkin
- 8 sprigs fresh thyme
- olive oil
- 6 strips bacon (sliced in 1/4 inch pieces and sauteed)
- 1 cup baby bella mushrooms (sliced and sauteed, or a mixture of other small mushrooms)
- 1 1/2 cups croutons (unseasoned)
- 8 sprigs fresh cilantro
