- 2 lb. sugar pumpkin (or pie pumpkin, peeled and cut into 1/2 inch pieces)
- 2 tsp. salt
- 2 tsp. pepper
- 2 tsp. nutmeg
- 2 Tbsp. olive oil
- 1/2 lb. pasta (Campanelle, or your favorite type - rigatoni and penne are also great options!)
- 6 oz. bacon (cooked and crumbled)
- 2 Tbsp. butter
- 1 Tbsp. flour
- 2/3 cup milk (I use reduced fat, 2%)
- 3 oz. mascarpone cheese
- 1 Tbsp. chopped fresh sage (plus 6-8 leaves for garnish)
- 1 tsp. red pepper flakes
- 1/4 cup chicken stock
- 1/2 cup Gruyere cheese (grated and divided in half)
- 1 cup Parmesan cheese (grated and divided in half)
