  • 3 ounces mascarpone cheese
  • 1 tablespoon chopped fresh sage (plus 6-8 leaves for garnish)
  • 1 teaspoon red pepper flakes
  • 1/4 cup chicken stock
  • 1/2 cup Gruyere cheese (grated and divided in half)
  • 1 cup Parmesan cheese (grated and divided in half)
