- 5 tomatoes (medium-sized, halved and core removed.)
- 2 boneless skinless chicken breasts
- salt
- pepper
- 2 garlic cloves (minced)
- 4 Tbsp. olive oil (divided, more if necessary)
- 1/4 cup balsamic vinegar (divided)
- 1 1/2 tsp. dried basil (divided)
- fresh basil (I used about 10 large leaves, but it up to you!)
- 200 grams bocconcini (drained and patted dry)
