- 1 Tbsp. chili powder
- 1 Tbsp. paprika
- 1 Tbsp. dried oregano
- 5 garlic (pressed)
- 5 Tbsp. EVOO
- lime juice
- 3 mangos
- 1 1/2 red bell peppers (diced)
- 1 red onion (diced)
- 1 serrano chile (diced)
- 6 scallions (diced)
- 1 bunch cilantro (chopped)

Directions
- Mix salt, pepper, cumin, chili powder, paprika, dried oregano, and garlic until thoroughly combined.
- Rub pork with olive oil and lime juice and rub spice mixture all over
- Refrigerate and let marinade for at least one hour or overnight
