I made this for my husband after he had it at our favorite Mexican restaurant. It's easy to make, absolutely delicious and it receives rave reviews.

What a refreshing side dish! I've been looking for a new way to cook poblanos and this is perfect. Reduced the recipe to 1/4 to serve one. I also added a small tomato and used coconut milk. Super yummy.
