- 1/4 cup sharp cheddar cheese (grated, omit for dairy free and paleo, optional)
- 1 avocado (ripe, thinly sliced or cubed)
- 1/8 cup fire roasted salsa (Easy Blender)
- 2 Tbsp. chopped fresh cilantro
- sour cream (optional, for serving)
- 6 tortillas (choice, 5-6" in diameter)
- 1 cup farinha de mandioca (I use the Otto's brand)
- 1/2 tsp. baking powder
- 1 pinch sea salt
- 1/4 cup olive oil (ghee, or lard)
- 1/4 cup warm water
