Good and simple. If you like fried okra that doesn’t have a lot of breading, this is a healthy alternative.

This is wonderful! I love okra and usually stew it with other vegetables, or grill it plain. But I tried it this way and I don't think I will ever want to grill okra again. So easy and so perfectly captures the flavor of the okra.

We forgot to dice them up so they tasted OK but I’m sure they’d be better being cut!! Our fault but an awesome way to change up the way we cook okra.

I love okra! I used to fry or saute them but roasting is by far the absolute best way to cook them!!

This is my new favorite way to eat okra. The pieces were a little crunchy and crispy, without the slime! I added a little creole seasoning, which I thought was great. It did make the okra a little spicy for kids. I could see using all kinds of spices to adjust the flavor. Great recipe!

So easy to do large batches of quickly. And you can then use the roasted okra in a lot of other ways! This is my new favorite way to cook and eat okra!

This is a great way to enjoy okra without breading and frying. I added Panko bread crumbs for that familiar crunch.
