- 1 cup grapes (seedless, about 30 grapes, wash and dry with a clean kitchen towel)
- 4 tsp. olive oil (extra virgin, divided)
- 1/4 cup black lentils
- 1 cup vegetable stock (low sodium)
- 1/8 tsp. ground black pepper
- 1/2 tsp. salt (kosher, divided)
- 2 oz. maitake mushrooms (sliced into 8 pieces through the stem, see pictures in the post)
- 1/4 tsp. ground white pepper (divided)
- 5 button mushrooms (stems removed, cut into small bite-sized pieces, small dice)
- 1 clove garlic (peeled and minced)
- 2 Tbsp. sherry
- 1 small onion (peeled and thinly sliced)
- 1/2 cup water
- 8 Tbsp. plain Greek yogurt (divided evenly between the squash)
- 8 sprigs fresh dill
- 1/4 tsp. ground black pepper (optional)
