- 2 beets (medium-sized, scrubbed and cut into small 1/4 inch chunks)

- 3 Tbsp. fresh lemon juice
- 1/2 tsp. lemon zest
- 1 Tbsp. minced shallot
- 1 tsp. Dijon-style mustard
- 1/2 tsp. honey
