Fall is here! This means comfort food and hearty meals. This is one of my favorite chicken dishes. Simple to make yet packed with flavor.
Ingredients

3 SERVINGS
- 3 chicken quarters
- 2 Tbsp. ground mustard
- 4 Tbsp. fennel seeds
- 3 Tbsp. garlic powder
- 3 Tbsp. paprika
- 1 Tbsp. salt
- 1 Tbsp. cracked black pepper
- 2 Tbsp. oregano
- 1/4 cup vegetable oil
- 3 Tbsp. poultry seasoning

Directions
- Begin with dry chicken quarters. Rub both sides with vegetable oil.
- Combine all spices in a bowl.
- Sprinkle both sides of chicken and cook in a 425° oven for 40 min.
