I make this recipe approximately once a month and love the flavor of the rub. Perfect.

The game hens I used were only 16 oz. each, and their package instructions were to use a much lower cooking temperature and longer cooking time. I decided to cook them at 400 degrees, and the internal temperature of the birds was 170 degrees when I checked them after 40 minutes. I predicted the vegetables might need longer to cook than the birds at the lower temperature, so I sliced the carrots thinner and omitted roasting the potatoes and prepared mashed potatoes instead. The onions cooked perfectly, the carrots were pretty crunchy but still fine, and the mashed potatoes tasted really good with the savory juices from the roasted hens.

This turned out great. I used poultry seasoning in additon to the other spices and left out salt instead of on the inside.
