- 1 large egg white
- 3 Tbsp. corn starch
- 1 tsp. rice vinegar
- 1 1/2 lb. boneless skinless chicken breast
- 3 Tbsp. extra-virgin olive oil (divided)
- 12 oz. frozen corn kernels (tiny)
- 16 oz. mushrooms
- 1 onion (medium, roughly chopped)
- 4 carrots (medium, roughly chopped)
- 1/4 cup chopped cilantro (finely)
- 4 cloves garlic (medium)
- 1 1/2 Tbsp. fresh ginger (chopped)
- 1 1/2 Tbsp. lemongrass (finely chopped)
- 3 Tbsp. red curry paste (available in the Asian section at most larger grocers)
- 1 Tbsp. mild curry powder
- 2 Tbsp. brown sugar
- 3 cups low sodium chicken broth
- 2 Tbsp. fish sauce
- 15 oz. coconut milk (2 cans, I almost always use the light variety)
- 8 mini bell peppers
- 1 red bell pepper (medium, quartered lengthwise and then sliced crosswise or you can use 6-8 of the mini bell peppers, depending on size)
- 1 tsp. sea salt
- fresh basil (for garnish, optional)
- fresh cilantro (for garnish, optional)
