- 3 turnips (2-, small, peeled & quartered)
- 3 watermelon radishes (peeled & halved)
- 6 fingerling potatoes (or baby, halved)
- 1 cipollini onion (whole with ends cut off & peeled, optional)
- 3 shallots (each sliced into 4 thick pieces lengthwise)
- 5 whole garlic (4-, cloves of, washed but not peeled)
- 10 fresh sage leaves
- 2 sprigs rosemary
- 1 1/2 Tbsp. fresh thyme sprigs
- 3 Tbsp. olive oil (2-, enough to coat the vegetables)
- 1/4 cup white wine
- 3/4 tsp. salt (or to taste)
- freshly ground black pepper
- 1 1/2 lb. chicken breasts (I used bone-in here; boneless cooks faster and doesn’t change the flavor of this dish)
- 1 Tbsp. unsalted butter
- 20 sage leaves
- 1 Tbsp. rosemary leaves (fresh)
- 1/3 tsp. fresh thyme leaves
- 1/4 cup white wine
- 1/2 tsp. salt (or to taste)
