- 1 Tbsp. olive oil
- 1 small yellow onion (thinly sliced)
- 4 cloves garlic (thinly sliced)
- 1 red bell pepper (medium, thinly sliced)
- 1/2 yellow pepper (medium, thinly sliced)
- 1 fennel bulb (medium, fronds saved for garnish, optional)
- 1 tsp. tomato (‘nduja, or 1 teaspoon tomato paste + 1/2 teaspoon red pepper flakes)
- 1 cup roasted tomatoes (canned crushed)
- 1 1/2 cups low sodium chicken stock (or 1 cup chicken stock + 1/2 cup dry white wine)
