- 6 red potatoes (scrubbed and cut into large chunks)
- 3 carrots (large, peeled and cut into large chunks)
- 1 onion (cut into large chunks)
- 1 Tbsp. olive oil
- salt
- pepper
- 1 whole roasting chicken (I don’t usually talk about brands, but I’m in love with the Smart Chickens found at our local store. I usually go with a 4 pounder. Rinsed, inside and out, and patted dry.)
- 2 Tbsp. butter (melted)
- 1 lemon (scrubbed and pierced several times with a knife)
- 1 bunch fresh thyme
