- 2 celeriac roots (3 lb. total, peeled and cut into eight to ten 1-inch-thick slices, steaks)
- 4 Tbsp. sherry vinegar
- sea salt (to taste)
- freshly ground black pepper (to taste)
- 4 cups sliced fresh mushrooms (cremini, button, shiitake, and/or oyster)
- 1 lb. sweet potatoes (peeled and cut into 2-inch pieces)
- 1 1/2 cups low sodium vegetable broth
- 7 cloves garlic
- 15 oz. no salt added cannellini beans (rinsed and drained, 1½ cups)
- 1 tsp. chopped fresh thyme
- 3 Tbsp. toasted walnuts (finely chopped, optional)
- 6 oz. tomato paste (can no-salt- added)
- 1/4 cup packed brown sugar
- 1/4 cup balsamic vinegar
- 2 Tbsp. reduced sodium soy sauce
- 3 cloves garlic (minced)
- 1 tsp. smoked paprika
- 1/2 tsp. freshly ground black pepper
- fresh flat leaf parsley (Chopped)
