I modified this a lot
I only used about 2 cups of broth and 1 leek , 3 carrots and garlic
didn’t have any Parmesan
Nd I seasoned to my own liking never follow recipes measurements
added turmeric and garlic powder aswell .

Yummy! I didn’t blend mine, I like it chunky! I also added a little freshly grated nutmeg for a warm spice to counter the spicy. Added a great whole grain/oat bread, perfect winter lunch!

Making it again tonight, we just finished it 2 days ago. I made some adjustment per our likes, but yum!

It was ok. I think I prefer my version that has less broccoli. more carrots and some rice

Pretty adaptable. I threw in some more carrots since mine were small, but I'm sure you could mix in another veggie on hand. Mine came out a slightly browner color, but I used bouillon cubes for half the stock, which was probably it. Sprinkle in extra paprika and chili for more of a kick.. Would make this again.
