- 1 cauliflower (including leaves, roughly chopped)
- 1/2 tsp. salt
- 1 handful fresh coriander
- 200 mL coconut milk
- 1 1/2 Tbsp. curry powder
- 2 tsp. light soy sauce
- 1 Tbsp. soft brown sugar
- 5 Tbsp. crunchy peanut butter
- 2 Tbsp. Thai red curry paste
- oil (choice)

Directions
- – Preheat the oven to 240°C / 220°C with a fan.
- – In a large roasting tin, add the cauliflower, salt, 2 tbsp oil, and curry powder. Mix well and cook in the oven for 25 minutes.
- – Add 1 tbsp oil to a hot pan. Add the Thai red curry paste, coconut milk, peanut butter, light soy sauce, soft brown sugar, and 100ml water. Mix well and cook for 2 minutes.
- – Add the roasted cauliflower and cook for 2 minutes.
- Serve with piping hot rice and garnish with fresh coriander – enjoy!
