- 2 cups coconut yogurt (such as Coyo)
- 8 scallions
- 1 bunch fresh cilantro leaves (for yogurt)
- 2 limes
- 3/4 Tbsp. coarse salt (for yogurt)

Excellent flavor. Everyone loved it. Which is good since it was time consuming for a side dish. We had a lot of the yogurt mix & seeds left at the end. Next time I would either half those items or double the carrots.

Absolutely delicious. If I'm going to the trouble of cooking vegan, it better taste this good!
