I had a head of cauliflower that needed a purpose and this recipe fit with what else I had available. The veggie roasting is a great tip I will keep. Overall, the soup needed more depth of spice/flavor: 1 tsp curry+2 tsp ginger/6 cups broth was not enough for my tasters. Added 2c crushed tomatoes in lieu of 2c broth and doubled curry, ginger, and garlic plus a pinch of ground gang bao and 👍🏽. This soup is likely really good with all the accoutrements, but alas our diet doesn’t accommodate dairy/saturated fats…

great - it was initially too thick so I added coconut milk and some water while I was blending it until i got to consistency I wanted.
