- 4 large carrots (peeled and halved, horizontally to make 8 pieces that are about the length of your tortillas)
- 1 red onion (small, peeled and sliced into 1-inch strips)
- 2 Tbsp. less sodium soy sauce (Kikkoman Traditionally Brewed, or Kikkoman Traditionally Brewed Soy Sauce, I used the Less Sodium version in recipe testing)
- 2 Tbsp. grapeseed oil (or cooking oil of choice)
- 2 tsp. cumin
- 15 oz. black beans (drained and rinsed)
- 1 lime (medium, zest and juice)
- 2 tsp. coriander
- 3/4 tsp. cayenne pepper (depending on spiciness desired, optional)
- 8 tortillas (small, warmed if desired, I used combination of whole wheat and spinach tortillas)
- 1 avocado (diced)
- 1 green onion (chopped)
