- 2 butternut squash (medium, peeled and deseeded, about 40 oz. total)
- 1 yellow onion (medium)
- 1 carrot (large)
- 1 clove garlic
- 3 Tbsp. sunflower oil (or olive oil)
- 1/4 tsp. nutmeg
- 1/8 tsp. canela
- 1 dash cayenne
- 1 tsp. salt (for soup)
- 1/4 tsp. black pepper (for soup)
- 4 cups vegetable broth (or chicken broth, for soup)
- 1 Tbsp. maple syrup
- 1 cup vegetable broth (or chicken broth, if necessary, for thinning)
- salt (to taste, for serving)
- black pepper (to taste, for serving)

Directions
- Preheat the oven to 400°F.
- Cut the squash into 1-inch cubes. Cut the onion and carrot into 1/2-inch pieces, and smash the garlic clove.
- Heat the oil in a large oven-safe pot or Dutch oven over medium-high heat. Once oil is shimmering, add onion, carrot, and garlic. Cook, stirring frequently, until vegetables are lightly golden, 5-6 minutes.

So delicious!!! I used bourbon aged maple syrup and thinned it with a bit of heavy cream instead of more vegetable broth. I will definitely be making this again!

great recipe, i replaced half a cup of broth for half a cup of cream to give it a creamerytexture and flavor. I will make it again. my husband likes a thick soup so Idecreased the broth a little.

Came out delicious! Only thing is that I added too much cayenne pepper so it was a bit spicy so to rectify I added some coconut milk (just a bit) and it added some creaminess and made it a bit more mild

Amazing! I added a little air fryer bacon to give it a little crunch and garnished with parsley. I also made a little cup and added toasted sesame seeds, which was delicious as well!

This was excellent! I added some smoked paprika and threw in Kale and some turkish meatballs. A crowd pleaser that I will definitely make again!

Unbelievable recipe with a slight kick with the cayenne. LOVED IT. I did add sweet potatoes and have made this recipe a few times now.

It was great! it was a tad sweet for us (I know it's a sweet soup, tastes great when you first start eating but too sweet towards the end of the bowl) so I added extra cinnamon, nutmeg, and chili powder. I made it a day ahead of the dinner so I could save time the day of. Reheating and serving with some herbs for garnish. This is a great dish for the occasion since I have a vegan friend and several omnivore friends at the same table. This doesn't come off as a "weird vegan dish" to the guys so I can sneak some healthier food into them lol.

This was easy and delicious! Preparing the squash was the biggest pain, but after that, it’s super simple. I blended all in my Vitamix for a velvety smooth texture. Some bacon bits sprinkled on top was the finished touch.

Delicious and soothing. I followed the directions with only a few exceptions. I added a few hearty shakes of cayenne, increased the cinnamon to 1/2 t. and used a vegan “chicken broth” substitute.

Added a cup of apple cider (not apple cider vinegar), 1/4 block of cream cheese, some brown sugar, and some butter came out delicious(almost like Panera). Might add a can of pumpkin purée / fresh pumpkin next time.

Turned out so yummy! I skipped the oven part and just let everything cook on the stovetop for 45 minutes. After, I used my blender to purée the soup.

Very good. I’d prefer a little more salt and heat so will add more cayenne and salt when I make it again

It was Easy and Delicious. Takes a bit og prep with the squash. carrots and onions but not too bad.

Delicious! A little time consuming, but worth the effort. Trader Joes had fresh butternut squash already cubed in their fresh produce section. I'm sure it is season, but what a time saver!
