- 1 lb. brussels sprouts (trimmed and cut in half)
- 3 Tbsp. olive oil (divided)
- 4 slices turkey bacon (cut into 1-inch pieces)
- kosher salt
- 1 Tbsp. apple cider vinegar
- 2 tsp. dijon style mustard
- 1 tsp. honey

Directions
- 1. Preheat the oven to 450° F and line a rimmed baking sheet with foil.
- 2. Put the Brussels sprouts on the baking sheet, drizzle with a tablespoon of olive oil and sprinkle with salt. Transfer to the oven and roast until tender, about 25 minutes.
- 3. In a large skillet over medium heat, add a tablespoon of olive oil and bacon and cook, stirring frequently, until the bacon is well browned, 8 to 10 minutes. Remove the bacon, drain on paper towels and crumble or roughly chop.
