- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup crumbled goat cheese
- 1 Tbsp. fresh dill (chopped, optional)

Directions
- Preheat the oven to 400°F.
- Line a large baking sheet with parchment paper. Set aside.
- Peel the beets and chop them into 3/4-inch cubes. Arrange in an even layer on the prepared baking sheet.

This was easy to make and came out great. Will make again. Paired with chuck steak and roasted cauliflower.
