- 2 beets greens (large, discarded and saved for another use cut into 1/2 inch pieces, the closer to 1/2 inch pieces the better because the beets will cook at the same time as the other veggies)
- 2 cups chickpeas (cooked, or, 1 15 oz can rinsed, drained, and patted dry)
- 1/2 cup couscous (uncooked)
- 1 small yellow onion (cut into large chunks)
- 2 Tbsp. grapeseed oil (or oil of choice)
- salt
- pepper
- 1/4 cup chopped parsley
- 1/4 cup tahini
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. parsley (minced)
- 2 cloves garlic (minced)
- 1/8 tsp. crushed red pepper flakes
- 5 Tbsp. water
