- 2 lb. beets (peeled, cut into 1/2" cubes, use gloves)
- 1 onion (small, quartered)
- 3 garlic cloves (in peels)
- 4 thyme (sprigs)
- 2 Tbsp. olive oil
- 5 cups chicken broth
- 1/2 cup pistachios (roasted, salted, I use the Everybody's Nuts salt & pepper)
- 1/2 cup parsley (chopped)
- 1 orange zested (juiced)
- 2 Tbsp. sherry vinegar
- 1/4 cup olive oil
- sour cream (for garnish, optional)
