Very good! I never roasted beets before and now I am wondering what took me so long... they are delicious.

I’ve never roasted beets and usually use canned for salads. This was so much better! Just bc I already had other ingredients I used pepitas in place of pistachios. You can’t go wrong with beets and goat cheese!

Absolutely yummy. I used my usual dressing of olive oil and lemon with mixed seasonings. Great flavors and one of the best salads ive made.
