- 5 lb. marrow bones
- 2 yellow onions (large)
- 4 carrots (medium, peeled and halved)
- 1 bunch celery stalks (halved)
- 4 bay leaves
- 10 black peppercorns
- sea salt (to taste)
- 2 Tbsp. extra-virgin olive oil
- 1 bunch spring onions
- 1/4 inch greens
- 1 bunch carrots (young rainbow, cut lengthwise into 1/4-inch thick slices)
- 1/2 tsp. chili oil (or more to taste)
- 4 cloves garlic (smashed, peeled, and minced)
- 1 qt. beef broth (or in my case, 3 cups beef stock and 1 cup water)
- 5 oz. mushrooms (fresh, flavorful, I used beech and king trumpet here, stems trimmed and caps sliced)
- 2 soba noodles (bundle)
- 3 Tbsp. lime juice (freshly squeezed, plus lime wedges for serving)
- 2 Tbsp. soy sauce
- sea salt
- black pepper
