- 1 red pepper (halved)
- 1 cup cherry tomatoes (or any low-water tomato like Roma)
- 1/2 cup extra-virgin olive oil
- 2 tsp. apple cider vinegar
- 3 Tbsp. almond butter
- 1 garlic clove
- 1/4 tsp. smoked paprika
- 1/4 tsp. salt (+ more to taste)
- 2 cups French lentils (cooked, cook according to your preference)
- 1 cup cherry tomatoes (sliced, fresh raw salad greens, cooked brown rice, optional)
