- 1 butternut (small, peeled and cut into wedges or rounds)
- 1 red onion (large, cut into wedges)
- 6 butternuts (green, baby, well rinsed and halved)
- 3 large carrots (peeled and cut into 5cm lengths)
- 3 sweet potatoes (orange, . skin on and cut into 2cm thick rounds)
- 6 aubergines (mini purple, halved)

- 1 pomelo (large, peeled and cut into segments)
- 80 grams rocket (wild)
- 100 grams feta
- 1/2 cup mixed seeds (roasted, and nuts, pumpkin, sunflower and pecan nuts)
