- 1 pinch sea salt
- oil (groundnut)
- lime (squeeze of)
- sweet chilli sauce (below)
- 1 cup cane sugar (unrefined)
- 1 cup water
- 2 red chillies (jalepeno)
- 2 cloves garlic
- 1/2 cup rice vinegar
- 1 1/2 Tbsp. tapioca starch (can also use cornflour, mixed with 2 tbsp cool water)
- 1 handful fresh mint leaves (chopped)
