- 1/4 cup coffee (regular, or 1/4 tsp instant granules)
- 4 Tbsp. cornstarch (2- ,depending on how much stock you have from the turkey)
- 1 onion (cut in half)
- 1 carrot (cut into chunks)
- capon (or turkey neck)

- 12 white bread (16 slices, dried ,use 16 sliced if using giblets ,torn into small chuncks)
- 2 cups turkey stock (1 –, or chicken)
- 1 onion (large, chopped)
- 4 rib chopped celery
- 4 slices prosciutto (3 –, chopped)
- 4 oz. chopped mushrooms (125gr, optional, instead of giblets)
- 1 Tbsp. sage
- 1 tsp. thyme
- 2 Tbsp. butter
- 1 egg
