- 100 mL cider vinegar (3½fl oz)
- 75 mL bourbon (2½fl oz)
- 225 grams plain flour
- 8 free range eggs (beaten)
- 600 mL full-fat milk
- 50 grams beef dripping (1¾oz, or lard)
- 4 kilograms beef (three-bone fore-rib, preferably aged for up to 28 days)
- vegetable oil (splash)
- salt
- freshly ground black pepper
- 300 mL beef stock (10½fl oz)
- 10 potatoes (floury, such as King Edward, peeled and cut into large pieces)
- 50 grams lard (1¾oz, beef dripping or vegetable oil)
- sea salt flakes (to taste)
- vegetables (steamed, to serve)
