- 12 oz. Smucker's Peach Preserves
- 3 Tbsp. Dijon mustard
- 1 3/4 lb. boneless pork sirloin roast
- salt
- pepper
- garlic powder

Directions
- HEAT oven to 350°F. Spray shallow roasting pan with no-stick cooking spray.
- COMBINE peach preserves and Dijon mustard in small bowl. Season roast generously with salt, pepper and garlic powder. Place in prepared baking pan. Pour peach-Dijon sauce over meat. Roast 1 1/2 hours or until pork reaches an internal temperature of 160°F, basting several times with sauce.
- REMOVE roast from pan to cutting board. Tent with foil. Allow meat to rest for 10 minutes. Slice meat 1/4-inch thick. Season pan juices with salt and pepper to taste. Heat and stir pan juices. Pour over meat and serve.

I altered the peach sauce with my own peach glaze to go over the top & finish it off. Scoring the top of the pork loin and massaging the seasoning in before putting it in the oven helps bake in more flavor.
also if soing this with an 18-20oz pork loin, only cook for 30minutes after searing both sides for 2-3mins per side. let it stand for 10mins afterwards.

Very easy. I added a little honey to add more sweetness. I think next time I'll use a tenderloin and marinade it in some salt first so the meat has a little more flavor. This paired very well with Simple Skillet Green Beans.

Very tasty and easy to prepare. Almost too much sauce but can be adjusted down if that’s your preference.

This dish was amazing and super easy to make. I made it over rice with a side or roasted asparagus and used leftovers to make mini slider sandwiches. The boys are already asking when I’m making it again:)
