- 1.5 kilograms free range chicken
- salt
- freshly ground black pepper
- 1 knob unsalted butter (plus extra for frying)

- olive oil (for drizzling and frying)
- 200 mL dry white wine
- 300 grams chestnut mushrooms (sliced)
- 200 mL double cream (I use Elmlea to reduce calories!)
- 180 grams comte cheese (rind removed and coarsely grated, see Tips)
