- 450 grams beef (silverside, diced into 1cm cubes)

- 2 carrots (peeled and cut into 1cm dice)
- 2 garlic cloves
- 2 tsp. tomato purée
- 250 mL red wine
- 200 mL brown ale
- 1 liter beef stock (or brown chicken stock)
- 1 tsp. fresh thyme leaves
- 170 grams self raising flour
- 150 grams suet (shredded beef)
- 50 grams beef fat (aged, rendered down)
- 1 pinch salt
