- 2 shallot (medium, bulbs, sliced thin)
- 1/2 cup coconut milk (the kind from a can, not the type you put on cereal!)
- 1/4 cup chicken broth
- 2 Tbsp. mustard (whole grain, spicy, or 'deli-style')
- 1/2 tsp. dried thyme
- salt
- pepper (to taste)
