I had to double the recipe because I had a 5.5lb loin, however, I would lesson the amount of chili powder and increase the cinnamon! Cinnamon apple sauce is an amazing complement!!

Very flavorful. Cooked at 350 for 25 minutes per pound. Do let it rest for 10 minutes to allow juices to redistribute back into meat. Served with danish squash cooked alongside roast.
